Hummingbird cake

A mix between a cake and muffin! 

 

3 cups sifted All Purpose Flour

1 tsp. Baking powder

1/2 tsp. Salt

2 cups sugar

1 tsp. Cinnamon

3 eggs beaten

1 1/2 cups vegetable oil 

1 1/2 tsp. Vanilla 

1 (8 oz.) can crushed pineapple undrained

1 cup walnuts

1 3/4 cup mashed bananas

 

Combine first 5 ingredients. 

Add eggs and oil, stirring until dry ingredients are moistened. Don’t beat. Stir in vanilla, pineapple and juice, walnuts, and bananas. Pour into a greased Bundt pan. Bake at 350 degrees for 45 minutes or until top is light brown and until a fork inserted in comes out clean. Cool. Sprinkle with powdered sugar!
